Banana Blossom Curry With Jack Seeds
People often get attracted by the beautiful cluster of banana for its well known taste ignoring its heart. But, believe me, this cone shaped dark purple colored fleshy flower bud has many outstanding medicinal properties. Also it makes a number of mouthwatering dishes and some eat it raw too. Banana blossom or banana heart is packed with essential minerals such as phosphorous, calcium, potassium, copper. Magnesium and iron which are vital for bodily functions. It is good for treating infections, supporting menstrual wellness with reducing bleeding and controlling diabetes etc. For vegetarians, now, it is considered a good substitute for meat given its fleshy taste.
Here is one tasty curry for you to try. It is a very simple recipe to begin with
- Jack Seeds 50 g
- Banana blossom 300g
- Bombay Onion 1/2 medium
- Garlic cloves 2
- Green Chilies 2
- Curry Leaves
- Pandan Leaves
- Unroasted Curry Powder 1 tsp
- Salt 1tsp
- Chillily Powder 1/2 tsp
- Turmeric ½ tsp
- Cinnamon ½ inch
- 02 Cups of Thick coconut milk
- Coconut Oil 02 tsp
Method
- Clean and peel off Jack fruit seeds and smash it lightly.
- Cut the Banana blossom in to small pieces and soak it in Salt water for 5 minutes.
- Drain and squeeze out salty water as best as you can.
- Put banana blossom pieces and jack seeds into a bowl and add some Unroasted Curry Powder, Salt, Chillily Powder, and Turmeric and marinate for some time.
- Heat a pot filled with sufficient coconut oil and add Bombay Onion, Garlic, Green Chilies, Curry Leaves, Pandan Leaves, and Cinnamon well.
- After a while put the marinated banana blossom and jack seeds mix in to heated pot. Mix it with tempered mixture and cook it for 7 minutes.
- Finally add thick coconut milk in to the mix and cook it well for 15 mins on low flame.
